Green Mango Salad Recipe

Ingredients :

250 g pork fillet, shredded

3 green mangoes

1 tablespoon peanut oil
5 cloves garlic, thinly sliced
6 scallions, sliced
1 tablespoon dried shrimp powder
1 tablespoon fish sauce
2 tablespoons roasted peanuts, crushed

1 teaspoon palm sugar

Pepper to taste
Salt to taste

Red chilies, chopped finely

 

Method :

Peel and slice the mangoes thinly and put into a large bowl. Sprinkle with some salt at the top. Heat a wok with oil and fry garlic and scallions separately and set aside. In the same wok quickly fry the pork until cooked, add the shrimp powder, fish sauce, peanuts and sugar. Remove from heat. Just before serving mix everything together, add pepper to taste and sprinkle finely chopped red chilies over the top.
