Green Mango Salad Recipe

In Thailand this would be made with green mangoes. If green mangoes are not readily available, substitute with tart green apples.

Ingredients : Serves 6

3 green mangoes

1 teaspoon salt
1 tablespoon peanut oil
4 cloves garlic, thinly sliced
6 spring onions, sliced
250 g (8 oz) pork fillet, shredded
1 tablespoon dried prawn powder
1 tablespoon fish sauce
2 tablespoons roasted peanuts, crushed 1 teaspoon palm sugar or substitute pepper to taste
Finely chopped red chilies, optional

Method :

Peel and slice apples thinly, put into a large bowl and sprinkle with salt. Heat oil and fry garlic and spring onions separately and set aside. In the same pan quickly fry the pork until cooked, add the prawn powder, fish sauce, peanuts and sugar. Remove from heat. Just before serving mix everything together, add pepper to taste and, if liked, sprinkle finely chopped red chilies over the top.
