Peel and slice the mangoes thinly and put into a
large bowl. Sprinkle with some salt at the top. Heat a wok with oil and fry garlic and
scallions separately and set aside. In the same wok quickly fry the pork
until cooked, add the shrimp powder, fish sauce, peanuts and sugar. Remove
from heat. Just before serving mix everything together, add pepper to
taste and sprinkle finely chopped red chilies over the top.
