Use a mortar and pestle to pound the chilies
and garlic together. Add vinegarm sugar and salt. Mix them well. If you
do not have a mortar and pestle, use a food processor to blend all the
ingredients together instead. However, it should be made a few hours
earlier to left to stand as blending makes the sauce frothy. Alternatively, use sambal ulek instead of chilies, crush the garlic and
mix everything together.
