Spicy Shrimp Curry Recipe

Ingredients :

Seasoning

1 teaspoon

Large shrimps

Cooking oil

Turmeric leaf, finely sliced

Kaffir lime leaves, finely sliced

Dried tamarind skin

Grated coconut, add half cup water and squeeze out for coconut milk

 

Onion, chopped

Garlic

Lemon grass (white part only), sliced

Chili paste

Fish curry powder

Piece fresh turmeric

Piece galangal

Grated coconut

 

 

Salt or to taste

Dark brown sugar

Chicken stock granules

Method :
  • Clean the shrimps and drain dry.

  • Marinate the shrimps with half amount of mixed ground spices.

  • Heat oil in a wok and fry the other half portion of mixed ground spices until fragrant.

  • Add coconut milk and bring to a simmer.

  • Add the shrimps and cook until gravy is very thick.

  • Stir in the tamarind skin, turmeric leaf, kaffir lime leaves and seasoning.

  • Cook until gravy turns almost dry.

  • Remove to serving plate

  • Serve immediately.
