Satay Gravy Recipe

Ingredients :

Oil

Lemon grass, sliced and crushed

Medium onion, finely chopped

Garlic, finely chopped

Dried shrimp paste (belacan)

Roasted, skinned peanuts

Dried tamarind

Hot water

Chili powder

Laos powder

Sugar

Salt

Method :
  • Put 2 tablespoons oil in a blender container.

  • Add lemon grass, onion, garlic, belacan and blend to a paste.

  • Scrape out blender container, add peanuts and crush finely.

  • Set aside.

  • Soak tamarind in hot water, squeeze to dissolve pulp and strain.

  • Heat remaining oil in a wok and stir fry the blended mixture over medium heat until it smells cooked.

  • Add the chili powder, Laos powder, tamarind liquid, sugar, salt and peanuts.

  • Simmer, stirring until thickened, about 8 minutes.
