Cut the beef fillet into paper-thin strips
and put in a bowl with the next seven ingredients. Set aside for about
30 minutes while preparing te vegetables. Soak the glass noodles in hot
water for 20 minutes, then drain and cut into 10 cm lengths. Stir fry
all the ingredients separately until just cooked. Use a large plate to
mix together and season to taste with soy sauce, salt, pepper and sugar.
