Fresh spinach
Pork fillet
Garlic
Oil
Light soy sauce
Ground black pepper
Spring onions, finely chopped
Egg, beaten
Toasted, crushed sesame seeds
Wash spinach well, remove the tough stems and break leaves into large pieces.
Dice the pork very small.
Chop garlic finely.
In a wok heat the oil and fry the pork and garlic, stirring constantly, until pork changes color.
Add spinach and toss well, season with soy sauce and pepper.
Cover and simmer on low heat until spinach is tender.
Add spring onions and egg and stir well over medium heat for 2 minutes.
Then sprinkle with sesame seed and serve hot with rice.
