Whitebait and Herbs Grilled in Banana Leaf Recipe

Ingredients :

500 g fresh whitebait, discard the head

1/2 turmeric leaf, sliced thinly

1/2 coconut, shredded and pounded finely

4 cup leaves, sliced thinly

25 g basil leaves, sliced

Banana leaves

 

Spices (ground)

10 red chilies

8 shallots

1 teaspoon fresh ginger, chopped

1 teaspoon turmeric, chopped

1 tablespoon sliced lemon grass (white part only)

1 lime, extract the pulp

 

Method :

Clean the fish and then drain. Combine the shredded coconut, ground spices, sliced cup leaves, turmeric and basil leaves with the fish and mix well. Place 2 tablespoons fish mixture on a banana leaf, roll up and secure with toothpicks. Make more with the remaining mixture. Grill the banana leaf parcel over hot charcoal until cooked. Serve immediately while still hot. Let the diners unwrap the parcel themselves.
