Meat Balls in Coconut Milk Sambal Recipe

Ingredients :

500 g minced beef

1 egg, lightly beaten

Salt to taste

3 tablespoons oil

7 shallots, sliced thinly

2 salam leaves

1 cm galangal, bruised

5 red chilies, seeded and sliced thinly

1 tomato, chopped

500 cc coconut milk

 

Spices (ground)

5 red chilies, seeded

3 cloves garlic

Salt and sugar to taste

 

Method :

Mixed the minced beef, egg and salt. Shape the mixture into balls and set on a tray. Brush the meat balls with oil ans steam until cooked. Heat a wok with oil and saute the shallots until golden brown. Then add the ground spices, galangal, chilies, salam leaves and tomato. Then pour in coconut milk. Simmer over low heat, stirring occasionally. Add meatballs to the gravy and simmer over low heat. Continue stirring until the gravy is thick and oily. Season to taste and serve.
