Fish in Turmeric Gravy Recipe

Ingredients :

500 g Milkfish

1-2 tablespoons lime juice

750 cc water

2 stalks lemon grass, bruised (white part only)

1 cm galangal, bruised

3 cm fresh ginger, sliced thinly lengthwise

6 cm turmeric, sliced thinly lengthwise

8 shallots, sliced thinly

3 cloves garlic, sliced thinly

2 tomatoes, quartered

Salt and sugar to taste


Method :

Wash the fish and pat dry with paper towel. Rub the fish with salt and lime juice. Let it stand for 20 minutes before washing and draining. Heat up a pot with the water to the boil and add all the ingredients except the fish. Simmer over low heat. When the gravy turns yellow, add the fish. Reduce the heat and continue to simmer until the fish is cooked and the spices are absorbed. Season according to taste.
