Chicken Stewed in Coconut Milk Recipe

Ingredients :

1 kg chicken

750 cc coconut milk

1 turmerid leaf, shredded and tied together

1 stalk lemon grass, bruised (white part only)

3 kaffir lime leaves

1 piece asam gelugur

 

Spices (ground)

100 g red chilies

1 1/2 tablespoons galangal, chopped

2 teaspoons turmeric, chopped

2 teaspoons fresh ginger, chopped

8 shallots

1 teaspoon powdered cilantro

Salt to taste

 

Method :

Cut the chicken into 8 pieces. Simmer the coconut milk with the ground spices, lemon grass, asam gelugur, turmeric leaf, and kaffir lime leaves. Keep stirring until the milk becomes oily and to prevent the coconut milk from curdling. Add the chicken pieces and simmer until it is cooked and the gravy has thickened. Serve hot.
