Tomato Salad with Mint and Spring Onions Recipe

Ingredients :

4 firm red tomatoes

6 scallions

1/2 cup fresh mint leaves

3 tablespoons lemon juice

2 teaspoons sugar

1/2 teaspoon chili powder

Salt to taste

 

Method :

Peel the tomatoes and cut into thin wedges. Slice the scallions finely and chop he mint leaves.  Mix lemon juice, salt, sugar and chili powder together. Stir until sugar dissolves. Then pour over the combined ingredients. Mix lightly but thoroughly. Cover and chill until serving time.
