Spicy Roast Chicken Recipe

Ingredients :

1.5 kg chicken

3 cloves garlic, crushed

2 tablespoons curry powder

1 teaspoon paprika

2 teaspoons salt

1/2 teaspoon ground black pepper

2 teaspoons fresh ginger, grated finely

1 teaspoon garam masala

2 tablespoons lemon juice

1/2 teaspoon ground curry leaves

2 teaspoons light soy sauce

2 tablespoons oil

2 tablespoons ground rice

2 tablespoons scallion, chopped finely

2 tablespoons fresh cilantro leaves, chopped

Warm water

 

Method :

Wash the chicken and pat dry with paper towel. Mix all the other ingredients with sufficient warm water to make a smooth paste. Rub this mixture outside and inside of the chicken. Set a side to marinate for 1 hour. Preheat an oven to 170oC (350oF) and roast the chicken for 1 hour or until the chicken is done. Serve warm or cold according to preference with rice, bread or even a salad.
