The easy way to make this fresh chutney is
in an electric blender.

Cut the spring onions into short lengths.

Seed the chilies and stalks removed.

Put everything into the blender container.

Blend to a smooth paste.

If a blender is not available, finely chop
the mint, onions and chilies.

Pound in mortar and pestle a little at a
time, until ground to a paste.

Mix in remaining ingredients.

Pack into a small dish and smooth the
surface.

Cover and chill until serving time.
