Cold Spicy Mashed Potatoes Recipe

Floury potatoes
Melted ghee
Lemon juice
Salt or to taste
Finely chopped fresh mint leaves
Spring onions, finely chopped
Hot milk as required

Method :

Boil the potatoes in their skins and as
soon as they are tender, drain well.

Peel and mash potatoes.

Add ghee, lemon juice and salt.

Mix in enough hot milk to give a smooth,
creamy consistency.

Taste for seasoning, add more lemon juice
and salt if required.

It should be quite piquant.

Mix in mint and spring onions.
-
Pat into a flat shape on a plate, or pile
in a bowl.
-
Garnish with a sprig of mint.
-
Serve cold or at room temperature.
