       Ingredients : 
      500 g floury potatoes 
      2
      tablespoons melted ghee 
      
      1/4 cup lemon juice 
      
		Salt to taste 
      
      1/2 cup fresh mint leaves, chopped finely 
      2 
		scallions, chopped finely 
		
		Hot milk as required 
		  
      
      
      Method : 
		
		Boil the potatoes with their skins and 
		when tender, drain well. Peel and mash the potatoes. Add ghee, lemon 
		juice and salt to taste. Mix in enough hot milk to give a smooth, creamy 
		consistency. Taste for seasoning, if needed, add more lemon juice and 
		salt. The taste should be rather piquant. Mix in the mint and scallions. 
		Make into a flat shape on a plate and garnish with a sprig of mint.
