Oyster Omelet Recipe

Ingredients :

5 medium oysters

1 tablespoon cornstarch

4 eggs

2 scallions, chopped

1 cilantro, chopped

1/2 teaspoon sesame oil

1 teaspoon pepper

Salt to taste

2 tablespoons peanut oil

 

Method :

Scrape and clean the oysters. Cut the oyster into small pieces and mix with 1 tablespoon cornstarch and set aside. Beat the eggs lightly until mixed. Add in the chopped scallions and cilantro. Blanch the diced oyster in boiling water for 30 seconds. Drain and add the sesame oil, pepper and salt. Mix well. Heat a wok over moderate heat with 2 tablespoons of peanut oil. Pour half the egg mixture into the pan and half of the diced oyster. When the edge of the omelets browns slightly turn it over to complete cooking. Repeat with the rest of the egg and diced oyster. Serve while still hot.
