| Ingredients : 
            450 g beef steak 
            1 teaspoon salt 
            2 tablespoons cornstarch 
            1 egg white 
            3 slices fresh root ginger 
            100 g snow peas 
            4 scallions 
            4 tablespoons vegetable oil 
            1 teaspoon lard 
            1 1/2 tablespoon stock 
            1 tablespoon soy sauce 
            1 1/2 tablespoons oyster sauce 
            1 tablespoon rice wine 
            Pepper taste 
              
      
      Method : 
		Use a sharp kitchen knife to cut the beef 
		steak into thin strips. Mix in the pepper and salt. Toss in the 
		cornstarch and
              coat in the egg white. Shred the ginger. Cut each snow peas
              slantwise in half and cut the onions slantwise in 4cm sections. Heat the oil in a wok or
              frying pan. When hot, stir-fry the
              ginger in the oil to flavor. Add the beef and stir-fry
              over high heat for about 1 minute. Remove and set aside. Add the lard to the pan. When hot, stir-fry the
              snow peas and scallions for 1-2 minutes. Add the stock and soy
              sauce, and continue to stir-fry for 30 seconds. Return the beef to the pan, add the oyster sauce and wine or
              sherry and stir-fry over high heat for 30 seconds. Serve 
		immediately while still hot with white rice.
