pig trotter, washed and cleaned, chopped into 4 pieces
tablespoons light soy sauce
tablespoons fresh cilantro leaves, chopped finely
Salt and pepper to taste
Rub the chopped pig trotter with the soy
sauce. Use a pot and fill with 4 cups of water and bring to boil. Add in
the pig trotter and remove any scum while boiling. Remove and discard
the bones when the meat is tender. Add garlic and onions into the pot.
Continue boiling for a further 10 minutes.
To add flavor,
sprinkle with the chopped cilantro leaves. Add pepper and salt according
to taste. Best to serve hot with steamed white rice.
