Nyonya Tamarind Fish Recipe

Lemon grass (white part)

Ginger flower bud

Galangal

Vietnamese mint leaves

Tamarind paste

Candlenuts

Dried shrimp paste (belacan)

Turmeric

Method :
  • Boil 1 liter of water in a pot.

  • Add the tamarind soup ingredients and bring to the boil again.

  • Reduce to low heat and simmer for 30 minutes, extract the liquid. This is the tamarind soup.

  • Heat 3 tablespoons oil in a wok.

  • Stir fry the blended ingredients till fragrant and mix with the tamarind soup.

  • Add fish and salt.

  • Cook until done and serve on a serving plate.

  • Sprinkle chilies, mint leaves and onion slices on top.

  • Serve hot.
