Marinate the chicken with
eggs, plain flour, salt and sugar for 30 minutes.
Coat in crispy flour
generously.
Heat oil and deep fry
chicken until golden brown.
Cut into bite-sizes
pieces.
Pour sauce ingredients on
the chicken.
Sprinkle shallots and
chopped peanut on to and serve.
Note : Heat oil thoroughly
before frying chicken. Reduce heat immediately to low and cook until
done. For crispier chicken skin, switch it back to high heat before
serving.
