Brinjal Sardines Curry Recipe

Canned sardines fish

Brinjal (aubergine)

Tomato

Red chili

Green chili

Coconut milk from 1 coconut

Salt and sugar to taste

 

Shallots

Garlic

Turmeric

Fish curry powder

Lemon grass (white part)

Coriander seeds powder (ketumber)

Method :
  • Heat 1/2 cup oil.

  • Stir fry blended mixture until fragrant.

  • Add 1 cup water and bring to a boil.

  • Add sardines fish, brinjal, tomato, red chili and green chili.

  • Bring to a boil.

  • Then add in coconut milk and season with salt and sugar.

  • Serve with steamed rice.
