South Sea Spare Ribs Recipe

Ingredients : Serves 4

90 ml/6 tbsp soy sauce
60 ml/4 tbsp red wine
90 ml/6 tbsp tomato ketchup (catsup)

75 ml/5 tbsp pineapple juice
15 ml/1 tbsp chopped basil
5 ml/1 tsp chopped sage
250 ml/8 fl oz/1 cup oil
Freshly ground black pepper
1.5 kg/3 lb pork spare ribs

Method :

Mix together all the ingredients except the pork, seasoning to taste with pepper. Marinate the pork in the mixture overnight, then drain and dry well on kitchen paper (paper towels). Put the pork in a greased baking tin (pan) and bake in a preheated oven at 180°C/350°F/gas mark 4 for 20 minutes, then turn the chops and bake for a further 20 minutes, basting frequently with the marinade. Drain the pork and finish off under a preheated grill (broiler) for 5 minutes until glazed.
