      50 g/2 oz/0.25 cup butter or margarine 
      
      1 onion, sliced 
      450 g/1 lb sausagemeat 
      5 ml/1 tsp sage 
      1 garlic clove, crushed 
      400 g/14 oz/1 large can of tomatoes, chopped 
      Salt and freshly ground black pepper 
      
      450 g/1 lb potatoes, sliced 
      225 g/8 oz cooking (tart) apples, peeled, cored and sliced 
      25 g/1 oz/0.25 cup plain (all-purpose) flour 
      
      300 ml/0.5 pt/1.25 cups milk 
      100 g/4 oz/1 cup strongly flavored cheese, grated

      Method : 
      
      Melt half the butter or margarine and fry (saute) the onion until soft. 
      Stir in the sausagemeat and fry gently for 10 minutes, stirring. Remove 
      from the heat, drain off any excess fat, stir in the sage, garlic and 
      tomatoes and season to taste. Parboil the potatoes for 10 minutes, then 
      drain. Layer half the potatoes on the base of a greased casserole dish 
      (Dutch oven) and spread half the meat mixture on top. Spread with the 
      apple slices, then a layer of meat and finally potatoes. 
       
      Melt the remaining butter or margarine in a saucepan, stir in the flour 
      and cook for 1 minute. Whisk in the milk and cook, stirring, until the 
      sauce thickens. Season to taste, remove from the heat and stir in most of 
      the cheese. Pour the cheese sauce over the casserole and sprinkle on the 
      remaining cheese. Bake in a preheated oven at 190°C/375°F/gas mark 5 for 
      30 minutes until browned and crispy on top.  |
