Sausage Pickle Recipe

Ingredients : Serves 4

15 ml/1 tbsp oil
450 g/1 lb pork sausages
4 onions, sliced
15 ml/1 tbsp tomato puree (paste)

45 ml/3 tbsp water
3 tomatoes, skinned and chopped

100 g/4 oz sweet pickle
Salt and freshly ground black pepper

Method :

Heat the oil and fry (saute) the sausages gently for 10 minutes. Add the onions and fry for a further 10 minutes until the sausages are cooked. Remove the sausages and keep warm. Add the tomato puree and water, bring to the boil, then add the tomatoes and pickle and season to taste. Heat through, then serve with the hot sausages on the top.
