Pork in Whisky Recipe

Ingredients : Serves 4

25 g/1 oz/2 tbsp butter or margarine

15 ml/1 tbsp oil
4 pork chops
Salt and freshly ground black pepper

150 ml/0.25 pt whisky
150 ml/0.25 pt Beef Stock

25 g/1 oz/2 tbsp light brown sugar

15 ml/1 tbsp Dijon mustard
5 ml/1 tsp cornflour (cornstarch)
15 ml/1 tbsp water

Method :

Melt the butter or margarine with the oil and fry (saute) the chops until browned on both sides. Season to taste. Stir in the whisky and simmer until the aroma subsides, then stir in the stock, sugar and mustard, bring to the boil, cover and simmer for 15 minutes until the chops are cooked. Mix together the cornflour and water, stir into the sauce and cook until the sauce thickens.
