      15 ml/1 tbsp chopped parsley 
      1 garlic clove, chopped 
      3 juniper berries, crushed 
      8 pork spare ribs 
      Salt and freshly ground black pepper 
      
      30 ml/2 tbsp oil 
      150 ml/0.25 pt dry white wine 
      
      300 ml/0.5 pt/1.25 cups Chicken Stock 
      Juice of 2 oranges

      Method : 
      
      Mix together the parsley, garlic and juniper berries and rub them into the 
      spare ribs. Season to taste with salt and pepper. Heat the oil and fry (saute) 
      the spare ribs until browned on all sides, then stir in the wine and bring 
      to the boil. Stir in the stock and orange juice, bring back to the boil 
      and simmer, uncovered, for 30 minutes until the meat is tender and the 
      sauce has thickened.  |
