Pork Fillet with Orange Sauce Recipe

Ingredients : Serves 4

50 g/2 oz/0.25 cup butter or margarine

450 g/1 lb pork fillet, thinly sliced

1 onion, chopped
15 ml/1 tbsp plain (all-purpose) flour

Grated rind and juice of 1 orange

30 ml/2 tbsp redcurrant jelly (clear conserve)
300 ml/0.5 pt/1.25 cups Chicken Stock
Salt and freshly ground black pepper

Boiled new potatoes and carrots, to serve

Method :

Melt the butter or margarine and fry (saute) the pork until browned on both sides, then remove from the
pan. Add the onion to the pan and fry until soft but not brown, then stir in the flour and cook for 1 minute. Stir in the orange rind and juice, the redcurrant jelly and stock and season to taste. Bring to the boil, return the pork to the pan, cover and simmer gently for 15 minutes until the meat is cooked through. Serve with boiled new potatoes and carrots.
