Pork with Apple Rings Recipe

Ingredients : Serves 4

4 pork chops
Salt and freshly ground black pepper
50 g/2 oz/0.25 cup butter or margarine
1 onion, chopped
25 g/1 oz/0.25 cup plain (all-purpose) flour

150 ml/0.25 pt Chicken Stock
150 ml/0.25 pt milk
2 cooking (tart) apples, peeled and cored
15 ml/1 tbsp chopped parsley

Method :

Season the chops with salt and pepper and fry (saute) in half the butter or margarine until lightly browned and cooked through. Transfer to a warm serving dish and keep warm. Gently fry the onion until soft but not brown. Add the flour and cook for 1 minute. Whisk in the stock and milk and bring to the boil, stirring continuously. Return the chops to the pan. Chop one apple and stir it into the pan. Simmer for 15 minutes. Meanwhile slice the second apple into rings and fry (saute) lightly in the remaining butter or margarine. Serve the pork with the apple slices and garnish with the parsley.
