Paprika Pork Recipe

Ingredients : Serves 4

50 g/2 oz/0.25 cup butter or margarine

15 ml/1 tbsp oil
450 g/1 lb pork fillet, cubed
3 onions, sliced
15 ml/1 tbsp paprika
25 g/1 oz/0.25 cup plain (all-purpose) flour

300 ml/0.5 pt/1.25 cups Chicken Stock
15 ml/1 tbsp lemon juice
15 ml/1 tbsp tomato puree (paste)

400 g/14 oz/1 large can of tomatoes, chopped
50 g/2 oz raisins
Salt and freshly ground black pepper

60 ml/4 tbsp soured (dairy sour) cream

Method :

Melt the butter or margarine with the oil and fry (saute) the pork until browned on all sides, then transfer it to a casserole dish (Dutch oven). Add the onions to the pan and fry until lightly browned, then stir in the paprika and flour and cook for 1 minute. Stir in the stock, lemon juice, tomato puree, tomatoes and raisins, season to taste and bring to the boil. Pour the mixture into the casserole and bake in a preheated oven at 180C/350F/gas mark 4 for 1.5 hours until the meat is tender. Swirl the soured cream into the casserole just before serving.
