Oriental Pork Recipe

Ingredients : Serves 4

30 ml/2 tbsp oil
450 g/1 lb belly pork, rinded and cubed

1 onion, chopped
15 ml/1 tbsp plain (all-purpose) flour

200 g/7 oz/1 small can of pineapple chunks
15 ml/1 tbsp white wine vinegar
1 green (bell) pepper, sliced
150 ml/0.25 pt Chicken Stock
5 ml/1 tsp soy sauce
Salt and freshly ground black pepper

Boiled rice, to serve

Method :

Heat the oil and fry (saute) the pork and onion until browned on all sides. Stir in the flour and cook for 1
minute, then stir in all the remaining ingredients, seasoning to taste. Bring to the boil, stirring, then cover and simmer for 35 minutes until tender. Serve with boiled rice.
