Lemon Pork Recipe

Ingredients : Serves 6

15 ml/1 tbsp oil
900 g/2 lb pork fillet, cubed
300 ml/0.5 pt/1.25 cups dry white wine

30 ml/2 tbsp ground cumin
2 garlic cloves, crushed
Salt and freshly ground black pepper

1 lemon, sliced
10 ml/2 tsp ground coriander (cilantro)

Boiled rice, to serve

Method :

Heat the oil and fry (saute) the pork until browned on all sides, stirring well. Stir in half the wine and the cumin and garlic. Season to taste with salt and pepper. Bring to the boil, cover and simmer for 30 minutes until tender. Remove the lid and add the remaining wine, the lemon slices and coriander and simmer until the sauce has reduced and thickened slightly. Transfer to a warm serving dish and serve with boiled rice.
