Bacon Steaks with Orange and Peppercorn Sauce Recipe

Ingredients : Serves 4

4 gammon steaks
Grated rind and juice of 1 orange

150 ml/0.25 pt Chicken Stock
15 ml/1 tbsp light brown sugar
5 ml/1 tsp green peppercorns
45 ml/3 tbsp orange marmalade

1 bunch of watercress

Method :

Grill (broil) the steaks until tender. Mix together the orange rind and juice, stock, sugar, peppercorns and marmalade. Bring to the boil and simmer for 8 minutes until thickened. Transfer the cooked steaks on to a warm serving dish, pour over some of the sauce and garnish with watercress. Serve the remaining sauce separately.
