Stewed Herbs Chicken Recipe

Boneless  chicken breast

Yellow and green Italian zucchini

Green, red and yellow capsicum

Onion, cut into chunks

Garlic, sliced

Tomato, cubed

Broth

Tomato juice

Thyme  (discard stems)

Salt

Pepper

Sugar

Olive oil as needed

Flour as needed

Method :
  1. Rinse  the chicken before cutting into pieces. Coat with the flour and set aside.
  2. Prepare a frying pan,  heat oil in pan and fry chicken until crispy. Remove.
  3. Stir-fry garlic with the remaining oil until fragrant, add zucchini, capsicum, onion, tomato and thyme.
  4. Stir constantly until flavor is released.
  5. Add broth and tomato juice, bring to boil, add salt, pepper and sugar to taste.
  6. Return chicken and cook for another 10 minutes.
  7. Remove to serving plate, garnish with lemon slices if preferred.
