Treacle Tart Recipe

Ingredients : Serves 4

175 g/6 oz/1.5 cups plain (all-purpose) flour
10 ml/2 tsp caster (superfine) sugar

75 g/3 oz butter or margarine

1 egg yolk
225 g/8 oz golden (light corn) syrup
50 g/2 oz/1 cup fresh breadcrumbs

15 ml/1 tbsp lemon juice
Cream, Custard Sauce or ice cream, to serve

Method :

Mix together the flour and sugar and rub in the butter or margarine until the mixture resembles coarse breadcrumbs. Mix to a firm pastry (paste) with the egg yolk, wrap in clingfilm (plastic wrap) and chill for 30 minutes. Roll out on a lightly floured surface and use to line a greased 20 cm/8 in pie dish. Warm the syrup, then stir in the breadcrumbs and lemon juice and leave to cool. Pour into the pastry base and bake in a preheated oven at 180C/350F/gas mark 4 for 35 minutes until set and golden. Serve hot or cold with cream, Custard Sauce or ice cream.
