Fruit Brulee Recipe

Ingredients : Serves 4

225 g/8 oz soft summer fruits -

(raspberries, strawberries, blackcurrants, redcurrants)

30 ml/2 tbsp maraschino
600 ml/1 pt/2.5 cups creme fraiche

100 g/4 oz/0.5 cup demerara sugar

Method :

Divide the fruit between four flameproof ramekins (custard cups) and sprinkle with the maraschino. Spoon the creme fraiche over the top and chill for at least 2 hours. Sprinkle with the sugar and brown under a hot grill (broiler) for a few minutes until the sugar has just melted. Cool and chill before serving.
