Frosted Chocolate Pudding Recipe

Ingredients : Serves 4

100 g/4 oz plain (semi-sweet) chocolate
225 g/8 oz cottage cheese, sieved (strained)
2 eggs, separated
50 g/2 oz caster (superfine) sugar

5 ml/1 tsp vanilla essence (extract)

2.5 ml/0.5 tsp almond essence
225 g/8 oz plain cake, cubed
150 ml/0.25 pt whipping cream, whipped

Method :

Melt the chocolate in a bowl over a pan of hot water. Remove from the heat and beat in the cottage cheese and egg yolks. Whisk the egg whites until stiff, then beat in the sugar. Fold into the chocolate mixture with the essences, then fold in the cake cubes. Stand the bowl over the pan of simmering water and cook for 15 minutes. Spoon into glasses and chill. Serve with the whipped cream.
