Butterscotch Puddings Recipe

Ingredients : Serves 4

50 g/2 oz butter or margarine

75 g/3 oz demerara sugar
75 g/3 oz fine semolina (cream of wheat)
300 ml/0.5 pt milk
150 ml/0.25 pt whipping cream, whipped
6 strawberries, sliced

Method :

Melt the butter or margarine, stir in the sugar and semolina and cook gently for 3 minutes. Gradually stir in the milk and continue stirring until the mixture boils and thickens. Simmer for 3 minutes, then pour into individual glasses and chill. When cold, decorate with the cream and strawberries.
