Brandied Berry Compote Recipe

Ingredients : Serves 4-6

100 g/4 oz gooseberries

225 g/8 oz blackcurrants

225 g/8 oz redcurrants

225 g/8 oz blackberries

225 g/8 oz raspberries
60 ml/4 tbsp blackcurrant juice

30 ml/2 tbsp lemon juice

45 ml/3 tbsp brandy
25 g/1 oz/3 tbsp icing (confectioners') sugar, sifted
50 g/2 oz/0.25 cup almonds, toasted
2 mint sprigs
150 ml/0.25 pt double (heavy) cream

Method :

Place the prepared fruit in a serving bowl. Mix together the blackcurrant juice, lemon juice and brandy and pour it over the fruit. Sprinkle with the icing sugar and chill for at least 3 hours. Sprinkle with the toasted almonds, garnish with the mint sprigs and serve with the cream.
