Baked Stuffed Apples Recipe

Ingredients : Serves 4

4 cooking (tart) apples
100 g/4 oz dates, stoned (pitted) and chopped
15 ml/1 tbsp golden (light corn) syrup
15 g/0.5 oz/1 tbsp butter or margarine
25 g/1 oz/2 tbsp demerara sugar
15 ml/1 tbsp cornflour (cornstarch)
Juice of 1 lemon

Method :

Core the apples and make a horizontal score in the skins all round. Stuff the centre with the dates and bake in a preheated oven at 180C/350F/gas mark 4 for 45 minutes until soft and golden round the edges. Place the syrup, butter or margarine, sugar and cornflour in a saucepan. Make the lemon juice up to 150 ml/0.25 pt with water and add to the pan. Bring to the boil, stirring continuously, then simmer for 10 minutes and serve with the baked apples.
