Teething Cake Recipe

Ingredients :

Plain white flour

Rice flour

Bicarbonate of soda

Light sesame oil

Freshly grated coconut

Grated palm sugar

Coconut milk for simmering

Sugar

Pinch of salt

Method :
  1. Sift the flours, salt and bicarbonate of soda into a bowl.

  2. Mix thoroughly and rub in the oil.

  3. Add enough water to make a firm paste.

  4. Knead well to a smooth dough.

  5. Mix together the grated coconut and palm sugar.

  6. Take little limps of dough, roll into balls, then flatten to a circle and put little of the coconut and palm sugar mixture on each.

  7. Close the opening and mould the dough together to seal.

  8. Roll again to a perfect globe.

  9. Boil the coconut milk and sugar in a large saucepan and when boiling fast, drop in the balls.

  10. They will sink at first but rise slowly to the top as they cook.

  11. Stir gently in case some stick to the bottom.

  12. When cooked, the balls will float on the surface.

  13. Simmer for at least 10 minutes after they started to float.

  14. Serve hot or cold with a little of the liquid.

Note : This is the famous cake that is prepared and sent around to neighbors and friends, or fed to the poor, in celebration of a baby's first tooth. They are little dumplings cooked in coconut milk.
