3 tablespoons silver fungus
3/4 cup rock sugar
Ice cubes for serving
Use a bowl to soak the silver fungus in
hot water until it softens and sweels. It should takes about 10-15
minutes. Drain and add into a saucepan with the rock sugar. Bring to the
boil until the rock sugar dissolves. Stir constantly. Cover with lid and
simmer for about 10 minutes. Cool and chill.
Combine with longan and syrup before
serving in a nice serving bowl. Add ice cubes if prefer cold. Otherwise
serve warm or at room tempearture.
