Silver Fungus in Sweet Soup Recipe

Ingredients : Serves 6

Silver fungus

Water

Rock sugar or white sugar

Longans or lychees

Ice cubes

Method :
  • Wash silver fungus and soak in hot water until it swells and softens, about 10 minutes.

  • Drain and put into a saucepan with sugar.

  • Bring to the boil, stirring until rock sugar dissolves.

  • Cover and simmer 10 minutes.

  • Cool and chill.

  • Before serving combine with fruits and syrup in a pretty serving bowl and add the ice cubes.

  • Serve in bowls with porcelain spoons.

  • Alternatively, serve warm or at room temperature and omit the ice cubes
