Red Bean Soup Recipe

Ingredients :

Tinned lotus nuts (optional)

Red beans

Dried tangerine peel

Water

Sugar

Method :
  1. Rinse the red beans thoroughly and then soak in cold water for at least 5 hours or overnight.
  2. Drain and bring a pot with 4 cups of water to a boil.
  3. Add the red beans and tangerine peel.
  4. Simmer and stir occasionally for about an hour.
  5. Add the lotus nuts and simmer for another hour.
  6. Once the beans are tender and just starting to break apart, add the sugar.
  7. Stir until dissolved.
  8. Serve hot or chilled.
