Red Bean Soup Recipe

Ingredients :

50g canned lotus nuts

250g red beans

1 dried tangerine peel

4 cups water

3/4 cup sugar

 

Method :

Wash and rinse the red beans thoroughly. Soak in cold water overnight. Drain and boil a pot of water. Add in the red beans and tangerine peel. Simmer and stir occasionally for about an hour. Add the lotus nuts and simmer for another hour. Add the sugar once the red beans are tender and start to split open. Stir until the sugar is dissolved. Serve hot or cold as preferred.
