Almond Junket Recipe

Ingredients :

10 g

4 tablespoons

150 ml

600 ml

1 teaspoon

1 can

Agar-agar or 25g gelatin powder

Sugar

Evaporated milk

Water

Almond essence (extract)

Cherries or mixed fruit salad with syrup to garnish

Method :
  1. Dissolve the agar-agar and the sugar with water in two separate pans over gentle heat.
  2. If using gelatin, just follow the instructions on the packets.
  3. Add milk and almond essence and pour the mixture into a large serving bowl.
  4. Allow to cool for at least 30 minutes and then place in the refrigerator for 2-3 hours to set.
  5. To serve, cut the junket into small cubes and pour the canned fruit and syrup over it.
