2 cups cold water
1/3 cup caster sugar
2 teaspoons agar-agar
2/3 cup evaporated milk
1/2 teaspoon almond essence
3 mandarins, peeled and segmented
water and the sugar in a small pot. Sprinkle the agar-agar powder over
the surface. Bring the mixture to the boil and simmer for about 1
minutes. Remove from the heat and add the evaporated milk and almond
essence. Stir the mixture evenly and pour into a shallow pan to set.
Chill in the fridge for about 1 hour. When sets, cut the jelly into
different shapes and serve with fruits.
