Sprinkle agar-agar powder over surface or
add soaked agar-agar strands.
One cup of soaked and drained agar-agar
strands may be used instead of the agar-agar powder.
Bring to the boil.
Stir until agar-agar is dissolved.
Turn off heat.
Add condensed milk and almond essence,
stirring well.
Pour into a large shallow dish and leave
to set.
Cut into diamond shapes and serve on its
own or with a mixture of oriental fruits such as canned lychees or
longans, canned mandarin segments, or fresh melon balls.
