Pour water into a saucepan, sprinkle the
agar-agar powder over the surface and bring slowly to the boil.

Boil until agar-agar dissolves, 5-10
minutes.

Add sugar and stir over heat until it
dissolves.

Remove from heat, pour 2 cups of the jelly
into a bowl, color pink with red coloring and flavor with rose essence.

Pour into a glass bowl rinsed with cold
water.

Keep remaining jelly warm in a pan of hot
water.

Refrigerate pink jelly.

As soon as the first layer sets (this
takes only a few minutes), pour 2 cups more agar mixture into the bowl
and flavor with vanilla.

Pour gently over the first layer and
chill.

Repeat with remaining jelly colored a pale
shade of green and flavored with almond essence.

Chill until serving time and serve from
the bowl.

Although the jelly is delicious chilled,
an advantage in hot countries where no refrigeration is available is
that it sets at the temperature of 27oC (80oF)
