Veal in Cream and Mushroom Sauce Recipe

Ingredients : Serves 4

350 g/12 oz button mushrooms
Juice of 0.5 lemon
25 g/1 oz/2 tbsp butter or margarine

450 g/1 lb veal, cubed
1 onion, chopped
15 ml/1 tbsp plain (all-purpose) flour

150 ml/0.25 pt Chicken Stock
150 ml/0.25 pt dry white wine
300 ml/0.5 pt/1.25 cups single (light) cream

5 ml/1 tsp paprika
Salt and freshly ground black pepper

Noodles and a green salad, to serve

Method :

Cook the mushrooms in the lemon juice for 2 minutes. Remove the mushrooms from the pan, reserving the cooking liquid, and keep warm. Melt the butter or margarine and fry (saute) the veal and onion until lightly browned, then remove from the pan and keep warm. Stir in the flour and cook for 1 minute, then stir in the stock, wine and reserved mushroom juice and cook for 3 minutes. Stir in the cream, mushrooms and veal and heat through gently. Add the paprika and season to taste. Serve with noodles and a green salad.
