100 g/4 oz/1 cup Stilton cheese, crumbled
25 g/1 oz/2 tbsp butter or margarine, softened
50 g/2 oz/0.5 cup walnuts, finely chopped
Salt and freshly ground black pepper
4 sirloin steaks
Mix together the cheese, butter or margarine and walnuts and season to
taste. Season the steaks with pepper, then grill (broil) them under a hot
grill (broiler) for 4 minutes each side or until cooked to your liking.
Remove from the grill and press the cheese mixture over the steaks, then
return to the grill for a further 1 minute until browned.
