Season the veal with salt and pepper and toss in the flour. Melt the
butter or margarine with the oil and fry (saute) the veal until golden
brown on both sides. Spread the veal thinly with the anchovies, cover with
tomato slices, sprinkle with the oregano and top with the cheese. Place an
olive on top of each and heat under a hot grill (broiler) until the cheese
softens. Sprinkle with the basil and serve immediately.
