100 g/4 oz/1 cup plain (all-purpose) flour
300 ml/0.5 pt/1.25 cups Beef Stock
2.5 ml/0.5 tsp thyme
2.5 ml/0.5 tsp rosemary
2.5 ml/0.5 tsp grated nutmeg
Salt and freshly ground black pepper
100 g/4 oz/1 cup Cheddar cheese, grated
Melt 25 g/1 oz/2 tbsp of the butter or margarine and fry (saute) the onion
and garlic until soft, then add the meat and fry until browned. Stir in 15
ml/1 tbsp of the flour and cook for 1 minute, then stir in the stock,
thyme, rosemary and nutmeg and season to taste. Simmer for 5 minutes, then
transfer to an ovenproof dish. Rub 50 g/2 oz/0.25 cup of the remaining
butter or margarine into the remaining flour, then stir in the cheese.
Spread the mixture on top of the mince and dot with the remaining butter.
Bake in a preheated oven at 180°C/350°F/gas mark 4 for 45 minutes until
golden brown and crispy.
