Beef with Pepper Strips Recipe

Ingredients : Serves 4

450 g/1 lb rump steak, cut into strips

10 ml/2 tsp cornflour (cornstarch)

60 ml/4 tbsp soy sauce
45 ml/3 tbsp oil
2 red (bell) peppers, cut into thin strips

10 ml/2 tsp chili powder
1 onion, sliced
1 garlic clove, crushed
25 g/1 oz fresh root ginger, peeled and grated
5 ml/1 tsp caster (superfine) sugar

30 ml/2 tbsp dry sherry
Boiled rice, to serve

Method :

Sprinkle the steak with the cornflour and some of the soy sauce and leave to stand for 15 minutes. Heat 15 ml/1 tbsp of the oil and fry (saute) the peppers, chili powder, onion, garlic and ginger for 3 minutes. Remove from the pan and set aside. Heat the remaining oil and fry the meat for a few minutes until browned. Return the pepper mixture to the pan with the remaining soy sauce, the sugar and sherry and stir-fry for a few minutes to heat through. Serve with boiled rice.
